Aunt Kitty’s Authentic Burritos
1 3-4 lb Pork Roast (tri-tip, butt roast, any decent cut)
2 T Vegetable Oil
2 Onions
2 Bell Peppers
4 Cloves Garlic
1 5 oz can Ortega Chilis (whole, cut into strips
3 T Chili Powder
3 T Cumin
2 T Turmeric
2 T Oregano
1 t Cayenne Pepper
Ø Cut pork roast into small bite-size cubes, moisten, and roll in flour and brown in oil, in iron skillet. (Hint: brown small amounts of meat at a time.)
Ø Add onions, peppers (green and Ortega), and garlic. Mix well.
Ø Add spices, mix well.
Ø Add enough water to cover entire mixture (4-6 cups). Cover, reduce heat to simmer.
Ø Cook 4 hours or so, stirring often enough to keep mixture from sticking to skillet. Add water, as necessary.
Ø Remove cover, turn up heat, and reduce remaining water level to desired consistency.
· To make quality burritos, place 4-6 T pork mixture in center of large flour tortilla.
· Add salsa, cheese or any other condiment.
· Fold up bottom of tortilla 1” over mixture; fold left side to right; fold right side to left.
· Pick up and enjoy.
